Ingredients
1×500g tin of sliced peaches in syrup
750ml strong coffee
120ml whipping cream
25ml brown sugar
1.5ml ground cinnamon
Generous pinch of ground ginger
Zest of one orange to decorate
Preparation:
Drain the peaches and set the syrup to one side. In a blender, process half the peaches and half the coffee for about a minute. Whip the cream in a clean bowl. Place the sugar, cinnamon, ginger, peach syrup and 250ml of cold water in a saucepan and bring to the boil. Reduce heat and simmer for 1 minute. Add the blended peaches and coffee and stir well. Serve topped with cream and decorated with orange zest.
